1. Seriously Fudgy Homemade Brownies – Sally’s Baking Addiction (sallysbakingaddiction.com)

This recipe is amazing! It yields soft, squidgy, chocolatey brownies every time. If like me, you like your brownies like brownies, not like cake, this recipe is a must try. If you’re in the UK, I recommend using Cadbury’s Bournville chocolate in place of the semi-sweet chocolate used in the recipe. I also always use half light soft brown sugar and half granulated sugar, as per some of the notes on the recipe. It also doubles up well, should you be making them for a party or to store in the freezer. I tend to make 1.5 quantity, and use two square pans, just because I don’t have the size recommended in the recipe.

2. The Best Chocolate Cake Recipe {Ever} – Add a Pinch

This really is true to it’s title. It is the best chocolate cake I’ve ever had, both because it bakes so reliably, but also because it is so soft and light, chocolatey and not too sweet. The incredible chocolate fudge icing more than adds to the experience. I’ve made this so many times now and it’s never gone wrong. And I have to confess … I don’t usually like chocolate cakes. I want to. I want to order them in cafes or bakeries when I see them sitting there. But, whenever I have, I’m so often left disappointed by them. They are often too dry, or not anywhere near chocolatey enough. Or the cake is ok but the icing is sickly and insipid. But not this recipe. Make this, and you’ll never need to look for another chocolate cake recipe.

3. Easy Nutella Millionaire’s Shortbread

This was originally posted by a friend of mine on her website, KerryCooks.com. Unfortunately, her website is no longer operational, but luckily she submitted this recipe to another website! It is so indulgent and luxurious but moreish at the same time. It’s so good, I’ve even asked other people to make it for me when they’ve asked what I want as a birthday treat, or to bring when they visit. So if you love chocolate, salted caramel and shortbread, you don’t need any other excuse to whip up a batch of these.

4. The Famous Chocolate Truffle Torte – Delia Smith

Chocolate torte is a classic, but many of them are too mousse-y, verging on cheesecake, for my tastes. I want my chocolate torte dense, rich and decadent. This one can only be enjoyed in the smallest of slices, but it really does make a wonderful occasion recipe. I first came across this through a family friend, who makes one every year on for my brother and my dad on their birthdays, as a gift. Hands up who’s putting chocolate torte on their next wish list?! I like to use a loose-bottomed pan for desserts and bakes like this, as it just removes a little of the peril when it comes time to take them out and serve!
