How to Use Up a Courgette Glut: Crispy Courgette Bites

I love courgettes. Let me just start by saying that. But even the hardiest veg eaters among us can get a little weary of endless courgettes in a good growing season. For those of you who don’t grow your own, courgettes might be a rare appearance, perhaps in a veg box, and you’re looking for a recipe to make them shine. Crispy courgette bites are my new favourite way to cook them.

Last night for dinner with jacket potatoes, I made this recipe for Crispy Courgette Bites and it was so good, I’m sort of hoping all this wet weather is going to give me the glut I’ve been preparing for!

So, if you’re a courgette fanatic like me, or just want something savoury and salty to snack on with a beer or as a side dish, make my super easy and delicious Crispy Courgette Bites recipe. This recipe would also work really with sliced patty pan squash or aubergines.

This delicious savoury side dish makes the most of the summer courgette season. If you grow your own, you can turn your glut into gold, which this simple but satisfying recipe.

Cook Time 10 minutes

Ingredients

  • 1 large courgette
  • 100g cornflour
  • Salt and pepper
  • Vegetable oil
  • Flaked sea salt or lemon juice (optional)

Instructions

  1. Slice the courgette on the diagonal into 1/2 cm thick pieces.
  2. Put the cornflour in a shallow bowl, and season with salt and pepper.
  3. Heat the vegetable oil in a large frying pan. For shallow frying, the oil should be 2-5 mm deep.
  4. Coat the courgette pieces in the cornflour and shake off any excess.
  5. Once the oil is hot (you can test this with a piece of courgette, if it sizzles when it hits the oil, it's hot enough), begin to add your courgette slices. Don't be tempted to overcrowd the pan, or the courgettes will take longer to crisp.
  6. Turn the courgette pieces occasionally until both sides are crispy and a light golden brown.
  7. Place on a piece of kitchen towel to absorb any excess oil while you fry the remaining courgette.
  8. Serve immediately sprinkled with a little flaked sea salt or a squeeze of lemon. Enjoy!

Notes

You could try adding different herbs or spices to the cornflour mix to flavour the courgettes. Try replacing 1-2 tsp of the cornflour with the seasoning of your choice.
